I have made this afternoon treat in both of my inns for the last 20 years and it never fails to please.
1/2 cup sweet butter
1/4 cup sugar
1 tesp. lemon juice
1 cup. sifted all purpose flour
1 lb. cream cheese
1/2 cup brown sugar
1 large egg
1 tbsp. vanilla extract
2 large apples
1/2 cup sugar
1 tsp. ground cinnamon
Cream butter, 1/4 cup sugar, lemon juice together in a large bowl, stir in flour until well blended.
Press dough into the bottom and about 11/2 inches up the sides of a 9 inch spring form pan. Refridgerate.
Preheat oven to 425 degrees.
Place cream cheese and brown sugar in mixing bowl, beat until fluffy. Add egg and vanilla. Beat until smooth.
Peel, core and slice apples into 1/4 inch pieces.
In a bowl combine remaing 1/2 cup of sugar and cinnamon, toss apples in this mixture until coated.
Pour the cream cheese mix into the prepared crust arrange slices of apple on top of mix.
Bake for 15mins. @ 425, reduce temp. to 350 and bake for a further 40-45 mins.
Remove from oven and cool on wire rack.
