ADOBE HACIENDA HUEVOS RANCHEROS
Serves 2 people
4 white corn tortillas
4 eggs
1 cup shredded mixed Monterey jack cheese and sharp cheddar
Green medium hot enchilada sauce
½ medium white onion chopped small
¼ cup fresh corn or frozen corn
¼ cup chopped mixed bell peppers
¼ cup fresh chopped cilantro (leave 4 stalks for garnish)
½ cup of fresh black beans (we slow cook ours with fresh garlic, onion & salt).
4 tbs. sour cream
1 fresh avocado
Canola oil
Mix onion, corn, peppers, cilantro and black beans together, season with salt and ground pepper for the salsa topping and put aside.
On griddle or in large frying pan add 2 tbs. canola oil and sauté tortillas on both sides for a few seconds on each side. Remove and place on 2 serving plates side by side. Fry 4 eggs to your liking, place each on top of a tortilla, spoon warm enchilada sauce over each egg, top with mixed cheeses and microwave for 45 seconds or until cheese has melted.
Top eggs with salsa on top in a line and put a teaspoon of sour cream on each egg. Garnish with cilantro and sliced avocado.
Serve immediately.
